The Palma Story

Jessica and Keith Valley were eager and excited about their move to an up-and-coming area of Central Florida. They had heard so much about its vibrant community andpotential. As they settled into their new home, they eagerly explored the area, looking for acozy local restaurant where they could enjoy a nice meal and meet their new neighbors.To their surprise, they found that the neighborhood lacked the kind of intimate,welcoming dining spot they were hoping for. Chain restaurants dominated the scene, butnone offered the personal touch and community feel they craved. Rather than feelingdiscouraged, Jessica and Keith saw an opportunity.

With a shared love for cooking and hospitality, they decided to create their ownsanctuary. They envisioned a place where people could gather, enjoy delicious food, andfeel a sense of belonging. They found a charming store front with lots of character andbegan transforming it into “Palma Italian Kitchen.”

With roots back to Sicily, Jessica cracked open her old recipes from her belovedgrandmother, Domenica. Mrs. Domenica quickly became the inspiration behind the idea of“Palma”. Born in Sicily, she brought with her the rich traditions of Sicilian cuisine and theart of making red wine to America where she settled in Pensacola, FL. Domenica's homewas always filled with the aroma of delicious food and the sound of laughter. She had a giftfor bringing people together, whether it was through her famous Sunday dinners or thebottles of homemade red wine she generously shared with friends and family. Her kitchenwas a place of warmth, love, and unforgettable flavors. Her home was also unforgettable,with gold plastered all throughout it and green curtains outlining the Florida sunshine thatflooded through the windows. These distinctive elements have woven into Palma'swelcoming atmosphere making it a place where no one wants to leave and is alwayswanting to come back.

Keith, a Fort Myers native and hospitality industry veteran, has infused a strongguest service emphasis to compliment Jessica's delicious dishes. Keith has always believed that great food alone was not enough to create an unforgettable dining experience. It's thelittle touches, personal interactions and the genuine care for the guest that has given Palmatheir edge. The welcoming environment can be felt as soon as one walks through the doors,between the intimate, cozy ambience to the smiling wait staff ready to get to know you. Oneof the highlights of the Palma experience is its personalized touch. Our staff takes pride ingetting to know our guests as they create an experience that leaves them feeling like family!
